Mechanical process and cold extraction of oil
The olives are placed in a hammer mill, which crushes this raw material in its entirety.
The olive paste is then kneaded at a temperature not exceeding 27°C in order to preserve its benefits and quality.
After that, the olive paste is transferred to a centrifuge to separate the solid from the liquid.
The olive oil is then filtered and stored in stainless steel tanks, awaiting bottling.
The oil is put into its containers a maximum of 1 month after harvesting.
Our cans and bottles have been selected from specific materials to preserve the benefits and flavors of our olive oils.
Conservation Council
Store the oil in a cool, dry place, around 14°C to 20°C, away from heat sources.
Make sure to close your bottles tightly after each use to prevent rapid oxidation.
Consume olive oil within 12 to 18 months of harvest to enjoy its aromas and nutrients.

The Picholine olive
Our fruity, single-varietal olive oil is made from the Picholine olive. Grown on our land, it is cultivated just before it reaches full maturity. Organically grown, this intense and vibrant green oil offers herbaceous, apple, and almond notes with a lingering finish. This is a premium organic extra virgin olive oil from France. Our oils can be ordered individually.
Its fruit
The Picholine olive is a uniform, solid green color. It will take on purplish-burgundy hues in late autumn, eventually becoming violet-black. This medium-sized, oval, and elongated olive is easily identifiable due to its slightly curved shape and more rounded end.
Its variety
Its tree adapts easily to any type of environment. It is currently the most common olive variety in France, but it is especially considered one of the symbols of the Gard.
His Harvest
Olives are harvested green from the end of September, then enter the veraison phase, turning reddish-purple, then dark purple, and finally black when fully ripe. Our Picholine first harvest olive oil comes from green olives, which at this stage of maturity contain a high concentration of antioxidants.
