What is extra virgin olive oil?
To be classified as extra virgin, it must have an acidity level equal to or below 1% and show no sensory defects.
This oil is ideal for Mediterranean dishes and can be used for salads, vinaigrettes, or cooking.
It is rich in polyphenols, which are beneficial for health, and stands apart from more refined virgin oils.
This process produces an exceptional product, delicately expressing Mediterranean aromas and flavours.
Mechanical process and cold extraction of oil
The olives are placed in a hammer mill, which crushes this raw material in its entirety.
The olive paste is then kneaded at a temperature not exceeding 27°C in order to preserve its benefits and quality.
After that, the olive paste is transferred to a centrifuge to separate the solid from the liquid.
The olive oil is then filtered and stored in stainless steel tanks, awaiting bottling.
The oil is put into its containers a maximum of 1 month after harvesting.
Our cans and bottles have been selected from specific materials to preserve the benefits and flavors of our olive oils.
Conservation Council
Store the oil in a cool, dry place, around 14°C to 20°C, away from heat sources.
Make sure to close your bottles tightly after each use to prevent rapid oxidation.

Its fruit
Very small and spherical, its pale green color is reminiscent of a mirabelle plum. It is an olive of small, aromatic, symmetrical olives, dark brown in color, rounded on top and with a large stem cavity.
Its variety
This type of olive adapts very easily to all types of soil. Nourished by regular drainage, the Arbequina olive tree needs plenty of water to grow. Considered quite oily, this variety allows for the extraction of a high oil yield.
His harvest
Unlike other varieties, this one is harvested early, during the month of November. This allows all its organoleptic qualities, namely its flavors and aromas, to be preserved intact during the oil extraction process.
