The Picholine Olive
Our fruity single-variety olive oil comes from an olive called Picholine.
Originating from our lands, it is cultivated just before its peak ripeness. Produced through organic farming, this green, intense, and ardent oil delivers herbaceous notes, apple, and almond with a long finish. It is a superior quality ORGANIC Extra Virgin olive oil.

Its fruit
The Picholine has a uniform and solid green color. It will take on burgundy-purple hues at the end of autumn until it becomes purple-black. This medium-sized, oval, and elongated olive is easily identifiable due to its slightly curved shape and more rounded side.
Its variety
Its tree easily adapts to any type of environment. It is currently the most common olive variety in France, but it is especially considered one of the symbols of Gard.
Its harvest
The olive is harvested green from the end of September, then goes through the veraison phase, turning purple-red, then dark purple, and finally black when fully mature. Our first harvest Picholine olive oil comes from a green olive, containing a large amount of antioxidants at this stage of maturity.

This long and respectful process allowed us to extract our product drop by drop. The olives are placed in a hammer mill, which crushes this raw material.
The olive paste is then kneaded at a temperature not exceeding 80.6°F to homogenize this mixture. Our olive oil thus retains all its flavors and benefits.
After this, the olive paste is transferred to a centrifuge to separate the solid from the liquid. Then, after recovering our oil, it is bottled in a dark container to preserve its properties.
Our cans and bottles have been selected from specific materials to preserve the benefits and flavors of our olive oils.
