In the heart of a wild nature with a complex climate, bees forage on different varieties of plants typical of this terroir. We find there, in large quantities, thyme, laurel, boxwood, oak trees, wildflowers, and, of course, the olive trees that inhabit the estate.

Our Honey comes from several hives recently installed on the Estate, in the garrigue. In the heart of a wild nature with a complex climate, bees forage on different varieties of plants typical of this terroir. We find there, in large quantities, thyme, laurel, boxwood, oak trees, wildflowers, and, of course, the olive trees that inhabit the estate.
Garrigue honey is characterized by typical, full-bodied tastes of Mediterranean honeys. It offers flavors of the most beautiful melliferous flowers of the region, such as thyme which gives it power, and lavender which brings persistent fruity notes on the palate. A bouquet of flavors complemented by the sweetness of rosemary.
Its crystallization testifies to its richness in natural glucose. It will regain a creamier texture to accompany all your gourmet ideas.

To be well preserved, our Honey should be stored in a dark and dry place, at room temperature.
Our Honey is already used in the Estate’s restaurant. It is soft, its texture is creamy, and it has a crystallized appearance.
Its creaminess and flexibility allow you to use it as a marinade for grilled meats or fish. It also incorporates very well into sweet and savory sauces.
It will also pair very well with cottage cheese.
Finally, if you’re planning a barbecue, our chef recommends adding a generous spoonful of our garrigue honey to a goat cheese and a few sprigs of rosemary. A perfect recipe to rediscover the flavors of summer!
